These 5-minute prep ham and egg puff pastry breakfast tarts are a delicious weekend treat! An all-time favourite recipe.

Ingredients

  • 250g puff pastry
  • 4 medium eggs
  • 4 slices of cooked ham
  • Dried herbs, to taste
  • Salt, to taste

Instructions

  1. Pre-heat oven to 200°C.
  2. Roll out puff pastry. Cut into squares, approximately 12 x 12cm. Make a hole in the middle of each square using a water glass.
  3. Line a baking tray with parchment paper. Place the slices of cooked ham on the baking tray and cover each slice with one of your puff pastry squares.
  4. Bake in the oven until the sides start puffing up high enough for a medium-sized egg to fit in, this should take approximately 5 minutes.
  5. Open the oven, crack an egg in each square, and continue baking until the egg white has set, yolk is slightly runny and puff pastry has cooked and is golden. Serve with dried herbs and salt.
